Ingredients
Before you begin, gather the following ingredients:
– 1 lb (450g) of suet
– 2 lb (900g) of flour
– 2 lb (900g) of currants
– 1 lb (450g) of sultanas
– 1 lb (450g) of raisins
– 1 lb (450g) of chopped apples
– 1 lb (450g) of sugar
– 2 oz (50g) of breadcrumbs
– 1 lb (450g) of black treacle
– 1 lb (450g) of molasses
– 1 lb (450g) of water
– 2 tsp of ground cinnamon
– 2 tsp of ground allspice
– 2 tsp of ground ginger
– 2 tsp of ground cloves
– 1/2 tsp of salt
– 1/2 tsp of ground cardamom
Instructions
1. Begin by preparing the fruit filling. In a large mixing bowl, combine the currants, sultanas, raisins, chopped apples, breadcrumbs, sugar, and spices. Mix well to ensure the fruit is evenly coated with the sugar and spices.
2. In a separate bowl, mix the flour and salt together. Add the suet to the flour mixture and rub the fat into the flour until it resembles breadcrumbs.
3. Gradually add the fruit mixture to the flour and suet mixture, stirring until you have a soft, pliable dough. If the dough is too dry, add a little water; if it’s too wet, add a little more flour.
4. Once you have a dough, turn it out onto a floured surface and knead gently until smooth. Divide the dough into two equal parts.
5. Roll out one part of the dough on a floured surface to create a round shape. Place the fruit mixture in the center of the dough, leaving a small border around the edge.
6. Fold the dough over the fruit mixture and pinch the edges together to seal. Repeat with the second piece of dough.
7. Place the dumplings in a greased baking dish and cover with a damp cloth. Allow them to rise for about 30 minutes.
8. Preheat your oven to 350°F (175°C) and place the dumplings inside. Bake for 2-3 hours, or until the dumplings are golden brown and cooked through.
9. While the dumplings are baking, prepare the liquid. In a saucepan, combine the black treacle, molasses, and water. Bring to a boil and then simmer for a few minutes.
10. Once the dumplings are done, remove them from the oven and pour the liquid over the top. Allow the dumplings to cool in the liquid before serving.
