How to Prepare Andhra Sambar: A Delightful South Indian Curry

Andhra Sambar is a popular South Indian curry that is known for its rich flavors and vibrant colors. Made with a variety of lentils, vegetables, and spices, this dish is a perfect blend of spicy, tangy, and savory tastes. If you’re looking to prepare a delicious Andhra Sambar at home, follow these simple steps to create a mouthwatering meal that will impress your family and friends.

Ingredients:

– 1 cup toor dal (split pigeon peas)
– 1/2 cup sambar powder
– 1 large onion, finely chopped
– 2 tomatoes, finely chopped
– 1 green chili, slit
– 1 teaspoon garlic paste
– 1 teaspoon ginger paste
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– 1/2 teaspoon cumin seeds
– 1/2 teaspoon fenugreek seeds
– 1/4 teaspoon asafoetida
– 1/2 cup water
– 1/4 cup tamarind extract
– Salt to taste
– Fresh coriander leaves for garnishing
– 2 tablespoons oil
– 1/2 teaspoon mustard seeds
– 1/2 teaspoon urad dal
– 1/2 teaspoon chana dal
– 1/2 teaspoon methi seeds
– 1/2 teaspoon fenugreek leaves (optional)
– 1 small piece of jaggery (optional)

Instructions:

1. Rinse the toor dal under running water until the water runs clear. Soak the dal in water for at least 30 minutes.
2. In a pressure cooker, add the soaked dal, turmeric powder, and 1/2 cup of water. Cook for 2-3 whistles or until the dal is soft.
3. In a separate pan, heat oil and add cumin seeds, fenugreek seeds, asafoetida, and mustard seeds. Allow them to splutter.
4. Add the chopped onions and sauté until they turn golden brown.
5. Add the garlic paste, ginger paste, green chili, and red chili powder. Sauté for a minute.
6. Add the chopped tomatoes and cook until they are soft and the oil starts to separate.
7. Add the sambar powder and mix well. Cook for 2-3 minutes.
8. Add the cooked dal, tamarind extract, and salt to taste. Mix well and let it simmer for 5-7 minutes.
9. In the same pan, heat oil and add urad dal, chana dal, methi seeds, and fenugreek leaves. Roast them until they turn golden brown.
10. Add the roasted spices to the sambar and mix well.
11. Garnish with fresh coriander leaves and serve hot with rice or roti.
