How to Prepare Flour Stick Noodles

Flour stick noodles, also known as Chinese noodles or Zhajiang noodles, are a popular and versatile dish in Chinese cuisine. Made from wheat flour, these noodles are known for their elasticity and chewy texture. Preparing flour stick noodles at home is a rewarding experience, as it allows you to customize the dish to your taste. In this article, we will guide you through the process of how to prepare flour stick noodles, from making the dough to boiling and serving them.

Ingredients

Before you start, gather the following ingredients:

– 2 cups of wheat flour
– 1 teaspoon of salt
– 1/2 cup of warm water
– 1 tablespoon of vegetable oil (optional)
– Additional water for kneading
– A pinch of salt for boiling
– Your choice of sauce or topping (e.g., soy sauce, sesame oil, chili oil, scallions, etc.)

Step 1: Mixing the Dough

1. In a large mixing bowl, combine the wheat flour and salt.
2. Make a well in the center of the flour mixture and add the warm water.
3. Gradually mix the water into the flour, using your hands or a wooden spoon.
4. Once the dough starts to form, turn it out onto a floured surface and knead for about 5-10 minutes, until the dough is smooth and elastic.
5. If the dough is too dry, add a little more water, and if it’s too sticky, add a little more flour.
6. Cover the dough with a damp cloth and let it rest for about 30 minutes.

Step 2: Rolling Out the Dough

1. After the dough has rested, divide it into four equal parts.
2. Roll each part into a long, thin cylinder.
3. Use a rolling pin to roll out each cylinder into a flat sheet, about 1/8 inch thick.
4. If the dough sticks to the rolling pin or surface, sprinkle a little flour on it.

Step 3: Cutting the Noodles

1. Fold the rolled-out dough sheet in half, then in half again, so it’s now a quarter of its original size.
2. Cut the dough crosswise into thin strips, about 1/4 inch wide.
3. Repeat this process with the remaining dough.

Step 4: Boiling the Noodles

1. Bring a large pot of water to a boil and add a pinch of salt.
2. Add the noodles to the boiling water and cook for about 2-3 minutes, or until they are soft and cooked through.
3. Drain the noodles in a colander and rinse them under cold water to stop the cooking process.

Step 5: Serving

1. Place the cooked noodles in a serving bowl.
2. Add your choice of sauce or topping, such as soy sauce, sesame oil, chili oil, scallions, or any other ingredients you prefer.
3. Toss the noodles well to coat them in the sauce and toppings.

Now you have successfully prepared flour stick noodles! Enjoy your homemade dish with your favorite accompaniments, such as meatballs, vegetables, or tofu. Happy cooking!
